To prepare the gelato machine, salt and refrigerator are required. Once the mixture is a freeze on the sticks the shape is given to them. Once the bacteria are removed the final product is prepared and the removal of bacteria does not affect the quality and taste.  For removal of bacteria both heating and cooling process is used before blending and freezing the mixture to serve.
